
[12.5] 1 1/2 cups Fresh Cranberries
[1.5] 1 1/2 cups Chicken Broth
[0] Pork Loin Roast

Throw in Crock Pot with favorite Pork Spices. I added parsley, salt, pepper, rubbed sage and my BELOVED Garlic Powder. If you are unsure, use those. They are tried and true and go EXTREMELY well with pork roast. Let cook for 8+ hours. 10 - 12 are AWESOME!
30 minutes before dinner time, pull the pork loins out of the crock pot. Shred with two forks. Return to crock pot and mix with the fluid. Let cook 30 minutes longer. Remove from crock pot. Either let cool 3-5 minutes or serve and let everyone figure out their own cooling time (I'm kindof sadistic like that, so I go the latter route!)

If you try it, try making a juice out of the cranberries prior to putting them in with the meat. I really couldn't taste the cranberry in the meat. :( A few recipes I checked out recommended store bought juice but they have sugar so I wouldn't recommend it.
Thanks for enjoying it. I wish it came out better but the meat is delicious and tender and juicy so at least I have some meat to make other stuff with (and munch on all day long! :D)
Vikki - I get the long ones at Wal-Mart for $10 - $12. I've also used Boneless Pork Shoulder Roast which to me is cheaper, more meat and same effect. Just depends on what's on sale and available when I shop.

Point 2: If you have not read a book, cover to cover, about a low carb diet then you do NOT understand them. I recommend reading the classic Dr. Atkins New Diet Revolution. He puts it all in laymen terms where any idiot can understand the science behind this way of eating. Don't leave comments telling me how low carb diets do not work or how you have modified your diet to include (insert over processed devil food or useless supplement here). You are only showing the depths of your stupidity. And I will laugh at you. Like this: HAHAHAHAHAHAHAHAHAHAHAHA!
